Description

Zur Herstellung von Sauerkraut, ein durch Milchsäuregärung konservierter Weiß- oder Spitzkohl, ist es notwendig, den Kohl ohne Strunk in feine Streifen zu schneiden. Um größere Mengen herstellen zu können, wurde ein Krauthobel eingesetzt. Mittels Kurbel und Zahnradgetriebe wurde die Schneide in Rotation versetze.
Sauerkraut ist reich an Milchsäure, Vitamin A, B, C und Mineralstoffen und war ein wichtiger heimischer Vitamin-C-Lieferant im Winter.
